Soak up the country’s lush green landscapes and rugged coast that have for generations inspired some of the world’s most renowned writers, including WB Yeats, Oscar Wilde and Bram Stoker. For city escapes, Dublin’s rich history, medieval Kilkenny and the foodie haven of Cork are just a handful of unmissable destinations – easily reachable from most UK airports. One thing that can always be counted on in Ireland is good craic (fun!) and a warm welcome from the friendly locals and memorable characters you’ll meet along the way. 2016 will be the year of Food for Northern Ireland as it has a distinctive food tradition and heritage influenced by the geography, climate and the long history of its people. Northern Ireland is gaining renown for the reputation of its local food producers and traditional food crafts such as butchery, bakery and distilling, which have a long and proud history here.

It has recently been taken over by the American businessman Kevin Wendle who has undertaken an extensive refurbishment programme and added a spectacular art and antiques collection including chairs by Jeanneret, lamps by Mouille and Guariche, Picasso ceramics and art by leading Latin American modern artists. Esencia is set on a majestic 50 acre estate midpoint between Tulum and Playa del Carmen. The Main House is the hotel’s centrepiece around which footpaths lead to only 29 suites and villas. La Sultana, Marrakech
Located in the heart of the historical medina, La Sultana is one of the most beautiful hotels in Marrakech, possibly the world. An oasis of calm, away from the bustle of the kasbah, La Sultana comprises five separate riads cleverly blended to create a home-from-home in the city. There are 28 bedrooms and suites, each with their own individual style and showcase of Moroccan craftsmanship, a heated swimming pool surrounded by palm, banana and sica trees, a restaurant serving western and local dishes, and a spa with individual hammams, treatment rooms and lounges. The breathtaking rooftop terrace has 360 degree views of Marrakech and the Atlas Mountains.
La Sultana, Oualidia
This is a very special kind of retreat, situated by a lagoon on the Atlantic coast of Morocco and halfway between Marrakech and Casablanca airports. The lagoon is a rare ecosystem, with its sandbanks, oyster beds and saltwater marshes. In contrast to Marrakech, the pace here is slower. Each of the 12 rooms and suites (there’s even a vast treehouse hidden among thick foliage) make the most of the views and incredible light. They have been individually designed with bathrooms and private terraces with water features, plants and a jacuzzi. You can relax in the infinity pool, experience the underground spa, or go windsurfing and kayaking on the lagoon.

A stone’s throw from Florence’s magnificent Duomo, Hotel Brunelleschi enjoys one of the best locations in the city, with many rooms benefiting from stunning views over the city’s iconic landmarks. The decadent Tower Suite sits atop the oldest building in town, a brick stronghold constructed in the 6th century to defend Florence from the Goths. The renowned architect Benelli recently refurbished this and other rooms with ornate mirrors, chandeliers and oak floors to create a sleek, intimate yet historic atmosphere. With most of the major museums and galleries within close walking distance, there’s plenty of time to sample the chef's award-winning homemade ice-cream or flick through Dan Brown’s Da Vinci Code, which references the hotel in its final pages. Chef Simone Bertaccini proposes pure flavours of Italy in the chic Santa Elisabetta Restaurant while the Osteria della Pagliazza serves a rich list of traditional Tuscan recipes, which can be savoured al fresco on the piazza during the balmy summer months. Ever thoughtful, the hotel even offers a dog-sitting service if you can’t bare to travel without your four-legged friend!

The oldest farm in Cape Town, Steenberg comes with a rich and fascinating history. The Steenberg Hotel offers the best of both worlds, being only 20 minutes from the heart of the city yet surrounded by lush vineyards and a natural amphitheatre which forms part of the Table Mountain range. A graceful blend of heritage and contemporary styles, the 24 rooms and suites are spread out over various buildings, including the original manor house. Catharina’s Restaurant serves up fresh, innovative comfort food underneath a multitude of origami swans hanging from the ceiling – a symbolic nod to the 17th century founder of the farm, who mistook the local geese for swans. Bistro Sixteen82 spills into the surrounding gardens with terraced dining and a seasonal tapas menu. As well as relaxing in the plush spa, guests can enjoy a round of golf on the championship 18-hole course and indulge in a spot of wine tasting.

Nihiwatu is an intimate island retreat of 32 villas on 567 hectares and 2.5 kilometres of pristine beach on the little known and beautifully preserved Indonesian island of Sumba. The island is located 250 miles southeast of Bali and although only a hour away by air, it remains undiscovered by mass tourism. It’s a magically pristine land of gorgeous beaches, tropical scenery and a fascinating tribal culture. Owned and managed by friends Chris Burch and James McBride, Nihiwatu was born out of a vision to protect and preserve the unique culture of Sumba and empower the local communities to support themselves and their families through The Sumba Foundation. The resort has been left almost entirely in its wild natural state - with only 10% of the land developed - apart from its rustically luxurious accommodation and public areas: comprising 32 private terraced villas, a bar and restaurant, a beachfront boathouse and a number of idyllic spa pavilions. The stunning 2.5 kilometre beach is bracketed by two rocky headlands and fronts one of the world’s great surfing waves. Other activities include the best sport fishing in Indonesia, hiking through beautiful landscapes to dramatic waterfalls, ancient villages and butterfly trails and stand-up paddling down the Wanukaka River. In March 2014, the property reopened following a major refurbishment programme and in summer 2015 it will unveil three new residences and the Nihi Oka Spa Safari.
